Copper and King American Brandy Company is a spirits producer situated in the northern part of Louisville, KY, adjacent to the Ohio River and a stones throw away from Indiana, in the picturesque neighborhood of Butchertown. As the name suggests the town used to be home to butchers and brewers, but has since shifted to a haven for artists, artisans, and distillers. Corsair RED Absinthe
Absinthe, which is a spirit traditionally derived from grand wormwood, anise and fennel, has a long and colorful history. While its origins remain unclear, the use of medicinal wormwood dates back to ancient Egypt. In the 18th and 19th centuries, absinthe was distributed by the French Army to its troops as a cure for several digestive diseases, including dysentery and tropical fever. When the troops returned home, they brought their taste for absinthe with them.Spurred by the temperance movement and winemakers, absinthe eventually became associated with hallucinogenic effects. One critic claimed that absinthe would "make you crazy and criminal,"and that it would "provoke epilepsy and tuberculosis." In 1905, Swiss farmer Jean Lanfray murdered his family after consuming considerable quantities of wine, brandy and two glasses of absinthe. While Lanfray had a history of alcoholism, Swiss teetotalers seized the moment and passed a referendum making absinthe illegal. Similarly, absinthe was prohibited in the United States for nearly a century; from 1912 until 2007, absinthe was not allowed to be consumed on American soil.Corsair RED Absinthe is a unique interpretation on the classic green spirit. "Our company got going about the same time the U.S. ban was lifted, so it was one of those things where we said we could make a little and people would come and want to know about it," says Andrew Webber, the co-founder of Corsair Artisan Spirits. "Its one of the most uncommon absinthes made in the world, so people have found use for our product, and it has its own uses in mixology."Corsair RED is made using traditional absinthe ingredients, but is tweaked with some unusual additions, including citrus, tarragon, dragon wormwood (a relative of grand wormwood) and red hibiscus flowers. "We think of a good spirit as something like a musical chord made up of several notes," says Webber, noting that Corsair originally envisioned creating a more traditional absinthe. Cruz de Fuego Mezcal Espadin

De Luze VSOP Cognac
The history of De Luze cognac began in 1817, when Le Baron Alfred De Luze and his brother Louise-Philippe journeyed to New York where they eventually started their business, importing and exporting Wines and Cognacs. Five years later Alfred founded A. DE LUZE and FILS in Bordeaux, and in 1862, in pursuit of producing a very high quality cognac he purchased the Domaine du Chaigne in Grande Champagne.In 1927, the De Luze house was granted the Royal Warrant by King Christian X of Denmark, to produce their Cognac. Meanwhile, in Angeac Champagne, Michael Boinaud is recommissioning the two family pot-stills, rekindling their operation. Del Maguey Vida Mezcal
The Del Maguey Single Village Mezcal Project was founded in 1995 by Ronald Cooper, an internationally renown artist and mezcalero. The project aims to identify and support independent mezcal producers in Mexico, who are bound by a common love for the land. "Through deep cultural relationships with Zapotec Mexican Indian producers in the remote villages of Oaxaca, Del Maguey harnesses ancient, original organic processes," says Cooper. Each mezcal belonging to the project is sourced from a unique region in Oaxacas Central Valley and represents a singularly exquisite expression of the villages terrior.Del Maguey Vida Mezcal is crafted from estate-grown agave, which are nearly a decade old and harvested by expert farmers with a special knife called a coa. Once the agave have been harvested, the heart of the plant, or pia, is removed and cooked for several days in a large, earthen pit lined with hot stones. This process caramelizes the pias natural sugars, and gives the pias a slightly smoky aroma and flavor profile. Then, the pias are crushed and fermented, before the remaining pulp is twice distilled through a small, wood-fired, riverside copper pot still.
