Chateau de Montifaud VSOP Cognac
For six generations, Chteau Montifaud has belonged to the Vallet family. In 1837, the vineyard was founded by Augustin Vallet who, upon his death, passed it along his son, Pierre. In turn, Pierre passed the estate on to his son, Maurice. Today, Louis, Michel and Laurent Vallet all direct descendants of Augustin manage the 90-hectare Vallet estate that stretches over the Grand Champagne and Petite Champagne regions of France.Even though the Vallet family owns land in the Grande and Petite Champagne regions, they refrain from blending the two regions in their cognacs. Instead, they represent each region individually, offering a pure and unadulterated flavor. The Vallet family also exceeds industry standards, aging their cognacs at twice the minimum required age statement for each category of cognac. Their VS is aged 4-5 years, their VSOP is aged 8-10 years, and their XO is aged 30 years. In addition to their intensive aging methods, Chateau de Montifaud also using a unique faibles technique to proof their cognac. These faibles are crafted by setting distilled water in cognac barrels and soaking them for awhile. The water gently pulls the remaining cognac that has soaked into the barrels over time, producing a low alcohol solution with 15 to 18 percent alcohol content. The faibles are then blended in increments, small portions at a time, through a process called petites eaux (little waters). De Luze VSOP Cognac
The history of De Luze cognac began in 1817, when Le Baron Alfred De Luze and his brother Louise-Philippe journeyed to New York where they eventually started their business, importing and exporting Wines and Cognacs. Five years later Alfred founded A. DE LUZE and FILS in Bordeaux, and in 1862, in pursuit of producing a very high quality cognac he purchased the Domaine du Chaigne in Grande Champagne.In 1927, the De Luze house was granted the Royal Warrant by King Christian X of Denmark, to produce their Cognac. Delord 25 Year Old Bas Armagnac
Situated in the Bas Armagnac region of France, Maison Delord was founded in 1893 by Prosper Delord. Prosper was a travelling distiller (he carried a pot-still with him while traveling to different farms in the Armagnac region) before he purchased his own estate in the village of Lannepax with his wife, Marie Duffau.Before his death in 1912, Prosper passed the estate on to his sons, Gaston and Georges, who eventually passed it along to their sons, Jacques and Pierre Delord. Today, Jerome and Sylvain Delord Prosper Delords great grandsons manage the prime 20 hectare estate located in the western part of Bas Armagnac, widely known as the "First Cru."The Delord brothers grow Colombard, Ugni Blanc and Folle Blanche grapes on their estate without the use of pesticides or fertilizers. The mild, sunny autumns and cool breezes of the Bas Armagnac region, as well the estates acidic soil and high mineral content, are especially suited for growing grapes.After the grapes have been harvested, they are pressed and fermented before being distilled in a single pass through Delords antique, Sier alembic stills. The stills are incredibly small they produce only 30 liters of Bas Armagnac each hour and are operated at low temperatures (typically, between 54 and 58 degrees), which enables the Bas Armagnac to preserve more of the flavors and fatty acids of the grapes.Once the grapes have been distilled, the Bas Armagnac is aged for a minimum of 25 years in Maison Delords cellars. The cellars hold just over 1,000 casks at any given time, the oldest of which are housed in a special area of the cellar known as Paradise (the oldest cask dates back to 1900). El Maestro Sierra Solera Reserva Brandy
In 1832, Jose Antonio Sierra, who was a master carpenter by trade, founded the El Maestro Sierra Winery in Spain. Prior to founding the winery, Sierra had been employed as a cooper for some of the most prestigious sherry makers in the country, and was an expert on the effects of maturing wine and spirits in oak casks. Today, the El Maestro Sierra Winery is shepherded by Pilar Pla Pechovierto, the widow of a direct descendant of Sierra. Over the past three decades, the estate has become renown for producing some of the finest sherries and brandies in Spain.El Maestro Sierra Brandy Reserva is produced entirely on the two-hundred year old estate. After the grapes used to craft the brandy have been harvested, they are fermented and then distilled. The resulting brandy is then solera-aged for a minimum of 20 years. Solera aging is a process that has generally been reserved for aging cognacs, ports and sherries. It involves filling a series of casks at different intervals over a long period of time. As brandy from the oldest cask is emptied and bottled, the cask is re-filled with an equivalent amount of brandy from the second-oldest cask in the solera. This cascading effect continues until the youngest cask in the solera is filled with new brandy. As a result, no cask in the solera is ever fully emptied. In 1755 a royal warrant was granted to the Maison Gautier Cognac, and a founding charter signed by King Louis XV.
