The Phylloxera plague in France subsequently made Massons stay in California permanent. Singani is an indigenous Bolivian spirit that has been produced since 1530, and distributed exclusively inside Bolivia. Fast forward to 2008, Steven Soderbergh attended a kickoff party in Madrid for the 2008 biopic Che. The casting director of the film gave him a taste of Singani, an aromatic, clear grape-based Bolivian spirit. The rest was history.Singani uses only muscat grapes of Alexandria which must be planted at a minimum of 5250 feet. Because Singani is not a recognized spirit category in most of the world, it is described as a brandy, but is better classified as an eau-de-vie. Singani has been described as being much like pisco, and came about when the Spanish brought their grapes and their distilling methods over to Latin America. Five hundred years later, its the national drink of Bolivia with a Domain of Origen, and yet still mostly unknown outside the country.In 2010, Steven Soderbergh created his own line, Singani 63, to be distributed everywhere outside of Bolivia. In November of 2014, he co-petitioned (with the Bolivian government) to the U.S. Alcohol and Tobacco Tax and Trade Bureau to recognize Singani as its own unique category, not unlike Pisco and Cachaa. Founded in 1982 by German-born Jrg Rupf, St. George Spirits is one of the oldest craft distilleries in the United States. The distillery, housed in an old World War II airplane hangar on a former naval base on the edge of San Francisco, is home to Lance Winters, mad scientist and St. Georges master distiller.Winters, who is widely-known for experimenting with different types of spirits, has a laboratory dominated by a 10-liter test still in addition to the glass beakers and graduated cylinders that cover every inch of his counterspace. The House of Torres was founded in 1870 by Jaime Torres Vendrell, but their history dates as far back as the 18th century when the Torres family bought their first vineyard in the Peneds region. The resilient House of Torres established itself as one of Spans leading wineries, producing some of the finest Spanish Wines in the country. Based in Barcelona, the family began producing brandy in the 20th century. The brandy is named Torres 30 Jaime in honor of the founder Jaime Torres, the 30 refers to the average age of the brandies in the blend. The brandy is comprised of several Parellada wines, aged in American oak casks. For the final blend, several soleras chosen from among the oldest in the Torres cellars. There are several grape varieties used in the blend, but the majority of the blend is the famed Parellada grape a regional variety that Bodega Torres is well-known for. The nose offers aromas of dried fruit and nuts (toasted hazelnut) with hints of vanilla and toffee. The plate is well-balanced, smooth and decadent. While the family-owned Zari Distillery was founded two decades ago in the year 2000, its history goes further back. The current distillery is built atop the pillars of the historic Povlen distillery, absorbing both the tradition as well as renovating the old buildings of the once-great operation and elevating it to modern new standards. Located in the town of Kosjeri, Serbia, they craft the popular traditional spirit of the Balkans rakija, a brandy that is produced using various different fruits. Combining Serbian tradition and experience with modern production techniques and science, the distillery now produces around 1 million of rakija each year. While rakija arrived in the Balkans with the Turks in the 15th century, it wasnt until the end of the 19th century that the Kosjeri region started producing the spirit using the various types of high-quality fruits that the region is known for. Using modern pot stills, they craft a wide range of brandy from plum, quince, pears, honey, raspberries, cherries, and apricots.Zari Nostalgia is a brandy that is made from quince, a type of pome fruit that is similar to pears.
