After selling his former businesses - Orin Swift Cellars, wine guru Dave Phinney, launched the spirits company Savage and Cooke in 2016. Their distillery produces exceptional brown spirits including bourbon, whiskey, rye, and of course, tequila.The Ayate line-up features two very unique tequilas, a Reposado, and an Aejo. These meticulously handcrafted tequilas are specially treated with a large deal of care. The agave used in these tequilas are hand selected by Rosendo Ramirez Senior, a who has been farming the region his entire life. Expert jimadors extract the hearts of the plant (pias) and they are transported to the distillery. The cores are removed and cut to precise specifications; four segments, which is a highly intensive method compared to other production methods carried out by most distilleries. The hearts are then roasted in an autoclave with a proprietary process, and the sweet juices are then slowly extracted from the tender pias and separated for fermentation. The tequila is crafted using a traditional copper pot still to emphasize the most intricate esters of the agave. What makes Ayate Tequila so distinct is their maturation technique. Being aged in ex-wine barrels gives their tequila a unique touch: "Our goal is to make spirits in the same way that we do wine, from soup to nuts. Cabo Wabo has a long and rich history. Founded by rockstar Sammy Hagar, famous for being Van Halens frontman between 1986 and 1996, the restaurant opened its doors in 1990. Launched with Hagars friend Marco Monroy in Cabo San Lucas, Baja California Sur, Mexico, the cantina had a rocky start but took off in the 90s, spawning franchises on the Las Vegas Strip and in Hollywood, California.Hagar began selling an in-house tequila brand during that first decade, after having discovered the wonderful world of premium, traditionally-crafted Mexican spirit. The CaliFino brand was born in 2014, however the story of its tequila started already in 1970s, when Don Jose Luna started developing a taste for fine tequilas during his visits to friends at the family-owned tequila distilleries in Mexicos Arandas. He would share the private batches of tequila moonshine style he got on these visits with friends and family, and he passed down this tradition to the next generation. The brand was created by his grandson Miguel Luna and his business partner Phil Salvagio, as they were looking for a way to meet the growing demand for the tequila, which Miguel introduced to all his friends in the soccer world. At first, Miguel only planned on importing just enough bottles for their friends, splitting the cost, but he soon learned that this would not be as simple as he had thought, and he ended up founding a company with Phil. The pair was involved in every step of the process of creating their tequila. They took several trips to Arandas, tasting best tequilas in local tequileras and developing unique formulas for the brand. When they got their formulas just right, they created their own bottle with the help of a local designer from Jalisco. CaliFino tequila is sourced from the Los Altos highlands in Arandas, Jalisco, an area known for its sweet agave and for sourcing some of the best tequila in the world due to the distinguished red soil, high elevation and increased sunlight.
