Situated on the banks of the Charente River, the Cognac region of France is divided into six different crus (cru is French term for growth zones): Grande Champagne, Petite Champagne, Borderies, Fins Bois, Bon Bois and Bois Ordinaire. The Grande Champagne cru, which comprises approximately 34,000 hectares, is known for its quiet hills and rich, chalky soil, and is considered to produce the finest cognac in the region.In 1610, the Guillon Painturaud family purchased a tiny, 18 hectare parcel of land in the Grande Champagne region of Cognac. For generations, the art of cognac production was passed down from parent to child, and today, Line Guillon Painturaud one of the few female master distillers in Cognac benefits from her familys four centuries of experience in the region (the family continues to live on the same estate it purchased in 1610).The 18-hectare estate, which is devoted entirely to the production of a single varietal grape, enjoys a rich, calcareous soil, along with a temperate climate and generous amounts of sunlight. As a result, the Ugni Blanc grapes harvested on the estate are incredibly acidic and flavorful, making them perfect for distillation. Once the grapes have been harvested from the familys estate, they are pressed and the remaining grape juice is fermented into a low wine. As a result of its three decade long beautyrest, the cognac has a dark copper color, along with an aroma of sauteed mushrooms, raisins, almonds and fresh figs. "We are one of the smaller houses in Cognac and produce a small percentage of what the major houses do," says Francois Le Grelle, the Managing Director at the House of Hine. The story of the iconic Hennessy cognac starts with an Irish officer in the service of King Louis XV of France. Richard Hennessy settled in the French region of Charente in 1765, and soon began trading in cognac. Hennessy started off ambitiously, and by the end of the century the house was exporting its premium spirit to the US. At the beginning of the 19th century, the company started conquering Australia and Southeast Asia, which was followed by South American, Japanese and Chinese markets. In 1860, a quarter of cognac exports bore the Hennessy name. Today, Hennessy sells around 70 million of bottles every year, which is roughly half of all worlds cognac, and over 350,000 casks of eaux-de-vie are kept in its cellars. The long and sophisticated process of making this premium cognac stars with the grapes. Desperate for a good agave-based spirit to stock at his bar (Caf No Se) in Antigua, John Rexer began smuggling artisanal mezcal from Mexico to Guatemala using banditos, river rafts, bribes, disguises, and late night drop points. As word spread about Rexers illegal mezcal, travelers and tourists, journalists and photographers and lawyers and businessmen began patronizing Rexers bar and smuggling the mezcal from Guatemala back to the United States. Simply put, Ilegal Mezcal began as an illegal pursuit to stock Caf No Se with some of the finest spirits being distilled in Mexico.Today, the journey of Ilegal Mezcal begins in the agave fields of Tlacolula, Mexico. There, under the watchful eye of master distiller Eric Hernandez, expert mezcaleros harvest agave plants that are nearly a decade old and have reached their peak of maturity.
