The Itkul Distillery is Siberias oldest distillery, tracing its history back to 1862, when a petition to distill was submitted to the Russian government. In 1895, Masataka Taketsuru the father of Japanese Whisky was born in the small town of Takehara, Japan. At the time, Masatakas family owned a sake brewery, and in preparing to carry on the family trade, Masataka studied chemistry and biology at Osaka Technical High School. After graduating high school, Masataka showed more interest in whisky than in sake, and in 1918, he enrolled at the University of Glasgow in Scotland, becoming the first Japanese ever to study the art of whisky-making. While in Scotland, Masataka took chemistry courses during the day while apprenticing at distilleries at night, learning to distill and blend whisky first-hand at some of Scotlands most prestigious distilleries. In 1920, Masataka returned to Japan, and within the decade, had produced the countrys first single malt whisky.In 1934, Masataka moved to the town of Yoichi and opened the doors to Nikka Whisky Co. In 1960, as the Yoichi Distillery was reaching capacity, Masataka began searching for another suitable location in Japan to open a second distillery. Following a three-year search, Masataka found a wide forest valley at the junction of the Hirosegawa and Nikkawagawa rivers. The localized humidity from the rivers and surrounding hills, together with the quality of water from Nikkawagawa River, created the perfect location for a second distillery, which he named Miyagikyo.This is Nikkas first ever vodka. "Part of the reason I started a distillery has to do with my family lineage," says Ryan Lang, the master distiller at Middle West Spirits. "Theres four generations of distillers blood in my veins, although I might be the first generation to do this legally."Situated in a 10,000 square-foot warehouse in the heart of the Ohio River Valley, Middle West Spirits was founded in 2008 by Lang, together with his business partner, Brady Konya. Together, the pair marry modern distillation techniques with traditional craftsmanship and its working.Each OYO Vodka is made exclusively from Ohio soft red winter wheat. "To get this whole process started," says Lang, "we started pulling grains from all over the state. We wanted to find something that best reflected the Ohio River Valleys unique terrior."After a tireless search, Lang and Konya identified a wheat varietal growing in northeastern Ohio that enjoyed a nutrient rich, clay soil. "The soil draws water from the wheat, and whats left in the wheat is a flavor thats more caramel in taste than wheat from other regions," says Lang. "Thats the flavor we wanted for our brands footprint."Once the soft, red winter wheat is harvested, it is transported back to Middle West Spirits, where Lang mills and mashes the grains before fermenting them in an open-top fermentation tank (Breckenridge Distillery uses a similar tank to produce Breckenridge Bourbon). Following fermentation, the wash is distilled an astounding 34 times through a column still.OYO Vodka has sublime notes of citrus, creamy vanilla and caramel, which complement touches of minerals and figs. Haliimaile Distilling is based in Hawaii, on the slopes of the East Maui Volcano. Its there that the LeVecke family, with over 50 years of experience with spirit-crafting, decided to set up their micro-distillery. The story of the R6 Distillery begins with one Rob Rubens becoming disillusioned after nearly a decade of working in corporate America. After taking a tour of the Old New Orleans Rum Distillery he was captivated by the idea of starting a small and family-owned distillery and bringing quality spirits to Los Angeles. This is how the R6 Distillery and Speakeasy, situated in LAs suburb of El Segundo, came to be.Rob turned to his family history for inspiration. The name "R6" comes from six Ruben brothers, Robs ancestors, who opened the Rubens Rialto Theatre in Joliet, Illinois in 1926. This entrepreneurship that runs in the family, as well as the stories he heard of the theatre operating in the Roaring Twenties and during the days of The Prohibition, played a great part in his decision to start R6. Just a few miles north of Denver, Colorado, Jeff Lindauer and Russ Wall are hoisting an , 450-gallon stainless steel water tank into the back of their Ford F-250 pickup truck. The truck, which the pair have nicknamed "Tinkerbell," is used to transport water sourced from Spring44 back to their distillery in Loveland, Colorado. "The first time I knew we really had something really special was when the lab called and asked where I got it," says Lindauer about water sourced from Spring44.In 1969, Don Lindauer Jeffs father purchased a 40-acre parcel of property in Northern Colorado that remains accessible only by navigating a jeep trail. The property, situated 9,000 feet above sea level and completely surrounded by the Roosevelt National Forest, is home to Spring44, one of the purest sources of water on Earth.Spring44 water is never touched by chemicals or municipal water treatment plants it comes directly from the ground. The spring isnt even served by an electrical grid the power needed to source the water from the spring is generated entirely from the sun. Naturally filtered by earth, only one billionth of one percent (or 0.000000001 percent) of water in the world meets this strict definition. In addition, the water sourced from the spring is slightly acidic and has a low Total Dissolved Solids ratio, meaning it has virtually no taste except for a touch of sweetness. "Its high-quality water," says Joe Tamurini, a senior engineer at Tetra Tech, a firm that specializes in engineering and consulting services related to water.Together with Jeff McPhie, Lindauer and Wall transport water sourced from Spring44 in Tinkerbell, which is outfitted with special suspension and gears in order in order navigate the jeep trail. At their distillery, the trio ferment a mash of corn, wheat and rye sourced from the Midwest before distilling it five times over in their custom-made, 50-gallon glass still. After distillation, the vodka is infused with raw, natural Colorado honey and brought to proof with water sourced from Spring44. Finally, the vodka is put through a unique, virgin coconut-husk carbon filtration process that removes any impurities.Spring44 is an incredibly smooth and pure vodka.
