Their very first spirit was a potato Vodka, and not long after, they began producing Gins. A large portion of Chases lineup is crafted with a potato Vodka base spirit. A large majority of the spirits are also crafted with and apple basedspirit. The apples used in production are sourced from the family farm.The facility houses a bespoke rectifying column. It takes 16 tons of potatoes to produces only 1000 liters of alcohol, which is a testament to the quality of Chase Vodka. CLIX Vodka
Situated on the Kentucky River in Frankfort, Buffalo Trace Distillery takes its name from an ancient pathway that migrating buffalo used when travelling westward. The trail was well-known among American pioneers and was eventually used by Native Americans and American settlers who crossed the Ohio River and followed the buffalo trace to the Western frontier. The distillery, which stands as the oldest distilling site in the United States, has a rich tradition of experimentation and innovation. Just over a decade ago, Buffalo Trace Master Distiller Harlen Davis Wheatley decided to embark on a project to create the perfect craft vodka. After 10 years of trial and experimentation, he succeeded. Wheatley graduated from Northern Kentucky University with a Bachelors of Science degree in Chemistry and worked for a chemical company while taking classes in Chemical Engineering at the University of Kentucky. Since 1995, he has been working at Buffalo Trace Distillery and has been master distiller for nearly a decade. "Producing high quality spirits is a passion for our distillery,"he says, "so when our team set out to craft the worlds finest vodka, we knew we couldnt stop until we created something truly special."CLIX Vodka was made using soft red winter wheat, plump rye, yellow dent corn and malted barley. After the ingredients were sourced, Wheatley began the painstakingly slow process of cooking and fermenting the grains. Over the course of the next year, 28,400 gallons of mash were distilled an astounding 159 times through a custom-designed series of copper and stainless steel stills. (CLIX is Roman numeral equivalent of 159.) "It was a diligent process that resulted in 159 separate distillations," Wheatley sheepishly admits. Ultimately, only 332 gallons of vodka enough for approximately 2,000 bottles were produced. Once distillation was complete, the vodka was placed into cool, dark stainless steel tanks for twelve months to ensure the smoothest finish. Following its year-long beauty rest in the stainless steel tanks, the vodka was bottled in a custom, lead-free crystal decanter designed by Nouvel Studio, a company dedicated to the artistic production of glass (a crystal stopper is included in the case, so the bottle is reusable after the vodka is consumed). In addition, the bottle is contained in a handcrafted, burl wood case that elegantly houses the decanter.Only 2,000 bottles of CLIX Vodka have ever been made. Just a half hour north of Manhattan in the village of Port Chester lies Westchester countys first licensed distillery, Still The One. Owner Ed Tiedge ditched his job as a hedge-fund portfolio manager after the recession in favor of creating a simple product for pleasure and enjoyment. Though his wife was skeptical, Ed managed to create a feasible business plan and find enough investors to open a distillery, which he named for his wife who is Still The One after 26 years. After some training at the Distillery Institute, Tiedge spent a month staging in Cognac, France, often times communicating with cognac distillers through a translation app on his iPhone. Though the neighboring distilleries used the same types of stills and grapes, their finished products tasted wildly different. Here, Tiedge developed a discerning palate and passion for the minutiae of distilling processes.From the beginning, Tiedge knew he wanted to work with honey. Though it is both expensive and difficult to ferment, he insists that it yields a sweeter and more complex spirit than vodka distilled from potatoes, wheat, or corn. Some vodkas are distilled nine or more times, and the repeated heating of the alcohol can have an adverse affect on the final product. Instead, StillTheOne chooses a gentler and more precise method in order to capture the essence and character of the honey without introducing harsh flavors or aromas. To make COMB Vodka, Tiedge starts with vats of Florida orange-blossom honey chosen for the distinct flavor that comes from the flower which he dilutes with water and impregnates with yeast, fermenting the solution in three steel fermentation tanks for about two weeks before transferring it to the stills a few steps away. Swirled into a glass from the base of one of the tanks, Tiedges mead is barely honey-hued, with just a hint of sweetness and a crisp, dry zing reminiscent of a good riesling. He distills the vodka from his honey wine. The final product is clear though unfiltered, with an aroma of orange blossoms and butter pecan. The silky palate is followed by an earthy finish of dried fruit, sweet grass, and spice. Despite its sweet beginnings, COMB Vodka is classifiably dry, clean and sharp. The company was founded and created by Dan Ackroyd and artist John Alexander, the artist who created the distinctive glass skull that the Vodka is bottled in.
