Salcombe is a town in southwest England. While its mostly known as a tourist spot today, it has a rich history that involves smugglers and fishermen. In the 19th century, it was a bustling port town that played a large role in fruit trade and was known for its "Salcombe Fruiters", small schooners that were built for speed a crucial factor in the transportation of fresh fruit. Steamships took over the fruit trade at the turn of the century and it wasnt until 1951 that sailboats came back in full force with the founding of the Island Cruising Club. Its there that Salcombe Gin co-founders first met in 1995. The pair would end each day of sailing with a gin and tonic at the Salcombe Yacht Club, eventually finding a common interest in the distilling industry. It was in 2014 that the idea took the form of the Salcombe Distilling Co.After months of experimentation, their first gin was born. Start Point is a London dry style spirit that was initially distilled using 60-liter copper pot stills. As the operation grew, the main still became a 450-liter one, nicknamed Provident. Santa Teresa 1796 Solera Rum
Situated in northern Venezuela, Hacienda Santa Teresa (hacienda is Spanish for plantation) was founded in 1796 by the Count of Trover, and was originally devoted exclusively to the production of sugarcane. At the time, most of the sugarcane consumed in Venezuela was imported from the Dominican Republic, despite the fact that Venezuelas tropical climate and generous rainfall made it ideally suited for the cultivation of fresh, raw cane. Today, over two centuries later, the estate harvests nearly 45,000 tons of sugar cane each year.Santa Teresa 1796 Rum is made from fresh, ripe sugarcane harvested exclusively from Hacienda Santa Teresa. After the sweetest sugarcane growing on the estate is harvested by hand, it is crushed and the remaining molasses is fermented with a proprietary strain of yeast. Following fermentation, a portion of the wash is distilled through column stills, while the remainder is distilled through pot stills. The wash distilled through the column stills produces a rum that is light in flavor and body, while the copper pot stills produce a rum that is more intense and robust.Once the rum has been distilled, it is matured through a solera composed of French Limousin oak casks. Solera aging is a process that has generally been reserved for cognacs, ports and sherries. It involves filling a series of casks at different intervals over a long period of time. As rum from the oldest cask is emptied and bottled, the cask is re-filled with an equivalent amount of rum from the second-oldest cask in the solera. This cascading effect continues until the youngest cask in the solera is filled with new rum. As a result, no cask in the solera is ever fully emptied. In addition, as the younger rum cascades through the solera, its average age and complexity gradually increases over time.Santa Teresa 1796 Solera Rum is made from a blend of rums that have been solera-aged and are up to 35 years old. The rum has an aroma of sweet caramel and creamy vanilla, with touches of toffee, cherries and raisins. The aroma opens up to notes of dried fruits (particularly oranges), molasses and berries on the palate, which fade into hints of toffee, chocolate and cinnamon. Sazerac Straight Rye Whiskey
In 1838, a Creole immigrant named Antoine Peychaud opened the doors to a pharmacy on Royal Street in the French Quarter of New Orleans. While Peychaud was an apothecary by trade, he was also a natural mixologist. He would often invite friends over to his pharmacy after it had closed and mix drinks for them, including a drink he crafted from brandy, absinthe and a proprietary blend of bitters.Peychauds cocktail became wildly popular throughout New Orleans. In 1850, Sewell Taylor owner of the Sazerac Coffee House located on Exchange Alley institutionalized the cocktail by using only Sazerac de Forge et Fils Brandy, a brandy which Taylor imported and sold exclusively. By 1869, Thomas H. Handy had purchased the Sazerac Coffee House from Taylor and by the turn of the century, a phylloxera epidemic forced coffee houses (at the time, the term "coffee house"was used to refer to a cocktail bar) to use rye whiskey rather than brandy in the making of the Sazerac.Sazerac Straight Rye Whiskey is rumored to be made from a mash of 51 percent rye, 39 percent corn and 10 percent malted barley. British farmers have long used an insecticide, referred to in laymans terms as Sheep Dip, to delouse their sheep prior to shearing. This liquid both cleanses the sheep of parasites and preserves the sheeps wool, and is commonplace on West Country farms.
