Louis Royer XO Fine Champagne Cognac
Situated along the banks of the Charente River in the Cognac region of France, Maison Royer is one of the most prestigious producers of cognac in the world. The House was founded in 1853 by Louis Royer, who was originally a beekeeper, like his father and grandfather before him (the symbol of Maison Royer remains a bee). After acquiring a few casks of cognac and letting them mature in the cellar of his home, Royer began bottling and selling the cognac under his own name, primarily to customers in Scandinavia.Today, Jrome Royer a fifth-generation master distiller and the great-great-great grandson of Louis Royer continues to shepherd his family legacy forward. "My blood is cognac," says Royer. Louis Royer XO Fine Champagne Cognac is made from the highest quality Ugni Blanc, Folle Blanche and Colombard grapes, which are harvested at their peak of maturity (generally in late August or early September). After the grapes are harvested, they are pressed and fermented into a wine, which is distilled twice through a traditional charentais pot still. Following distillation, the cognac is matured in oak casks that are coopered from wood sourced from the Limousin and Tronais forests. Limousin and Tronais wood is loosely grained and porous, allowing it to impart more flavor and tannins to the cognac that comes in contact with it.After the cognac has matured for some time (the exact length depends on its aroma and flavor profile as it matures), it is blended by Royer, together with Master Blender Laurent Robin. We are looking "to find a harmonious combination that will bring out the natural perfumes of the cognac," says Royer. After the cognac has been married together, it is placed back into the oak casks, where the blend is allowed to rest until it has reached its peak of perfection.Louis Royer XO Fine Champagne Cognac is made from some of the oldest cognac maturing in the cellars of Maison Royer (the oldest stocks in the cellar are stored in an area known as Paradis). The cognac has a deep, nutty aroma, with touches of citrus and oaky tannins. The aroma opens up to notes of honey, milk chocolate and orange zest on the palate, which are followed by hints of layered citrus, dried fruits and coffee. The finish, which is complex and elegant, has notes of vanilla and caramel.Louis Royer XO Fine Champagne Cognac earned five stars from F. Paul Pacults Spirit Journal, which ranked it as one of the Top 25 Spirits in the World in 2013. "The XO is a banquet of wonderful aromas and flavors that would easily please any sophisticated admirer of luxury spirits," says Pacult. In addition, the cognac earned a score of 96 points at the Ultimate Spirits Challenge in 2013.Pick up a bottle today!

Low Gap Bavarian Hard Wheat Whiskey
Master distiller Crispin Cain is a seasoned spirits and wine industry veteran. In 1983 he was moonlighting jobs in Pleasanton in a wine cellar, and on a bottling line, while working with Cooper Laboratories plasma kinetics division during the day. After having settled in Mendocino County, in 89 Crispin Cain worked as assistant distiller to the brandy master Hubert Germain-Robin for seven years before founding Greenway Distillers Inc. with his wife, partner, and vice president, Tamar Kaye in 2005.In 2008, he started a second company, Tamar Distillery Inc. which produces Low Gap Whiskey, Russell Henry Gin, DSP 162 Vodka, and Fluid Dynamics Barrel Aged Cocktails. Cain has proved to be quite the wizard on the still, known for delivering award-winning spirits, he has been distilling since way back in 1989.It was while working for Germain-Robin that Cain got the idea of creating high-quality whiskey from Northern California that would express the purity of nature, "one which expresses the simple beauty of clean air, clean water, and tall trees, while capturing the complexity of malted grains from a variety of local and classic sources." He continues: "I create Low Gap whiskies using the time honored traditions of Cognac, keen attention to fermentation, the Charentais Pot Still, the double distillation method, choosing fine barrels to match fine spirits. Carefully selecting the distillate which becomes Low Gap Whiskey is the best part of my job, I do this with great pleasure," says Cain of his Low Gap Whiskey. Low Gap Bavarian Hard Wheat Whiskey is made exclusively from malted Bavarian winter wheat, which has a high protein content and is ideal for fermentation. Once the wheat has been malted and mashed, it is fermented into a craft beer with an 8.8 percent ABV. Following fermentation, the wash is twice distilled through Coales antique, 15-hectoliter cognac still. After distillation, the whiskey is aged in three different types of barrels: new American oak casks, 350-liter French Limousin oak barrels that were previously used to age brandy, and used American oak barrels that were previously used to mature Pappy Van Winkle Bourbon. After the whiskey has aged for a minimum of two years, it is brought to proof using rainwater and bottled by hand. The whisky has an oaky aroma, with touches of toasted wheat, chocolate and crackers. The aroma fades into notes of sweet caramel, malt, butter and tobacco on the palate, and ultimately leads to a finish accented by raisins, prunes and plums.Pick up a bottle today!

Lucid Absinthe Superieure
Absinthe, which is a spirit traditionally derived from Grande Wormwood, anise and fennel, has a long and colorful history. While its origins remain unclear, the use of medicinal wormwood dates back to ancient Egypt. In the 18th and 19th centuries, absinthe was distributed by the French Army to its troops as a cure for several digestive diseases, including dysentery and tropical fever. When the troops returned home, they brought their taste for absinthe with them. The popularity of absinthe grew, particularly among bohemian artists and writers such as Ernest Hemingway, Vincent van Gogh and Oscar Wilde, all known to be absinthe drinkers.Spurred by the temperance movement and winemakers, absinthe became associated with hallucinogenic effects. One critic claimed that absinthe would "make you crazy and criminal," and that it would "provoke epilepsy and tuberculosis." In 1905, Swiss farmer Jean Lanfray murdered his family after consuming considerable quantities of wine, brandy and two glasses of absinthe. While Lanfray had a history of alcoholism, teetotalers seized the moment and passed a referendum making absinthe illegal; it was not until 2007 that absinthe was allowed to be legally sold again. On March 5, 2007, Lucid Absinthe Suprieure became the first genuine absinthe to be legally available in the United States in nearly a century.A traditional French absinthe, it is made from Grande Wormwood (artemisia absinthium), European green anise and sweet fennel, along with a secret recipe of other whole herbs and spices (the absinthe is never cold mixed from industrial extracts or steam distilled essences or oils). In addition, the absinthe receives its traditional green color directly from the whole herbs used in the recipe; it is not colored with artificial colorants or chemicals as are some other verte-absinthes, and no sugar is added following distillation.Lucid Absinthe has a strong aroma of anise, cumin, fennel and sage that gives way to notes of roasted peanuts, walnuts, pine and salty tang on the palate. The finish is complex and lingering, with a touch of anise and fennel. The absinthe earned a score of 90 points at the Ultimate Spirits Challenge, which named it the top absinthe in the world.Lucid Absinthe Suprieure is certified kosher by the Kashruth division of the Orthodox Union and is gluten-free. Mackinlays Shackleton Blended Malt Scotch Whisky
Launched by independent bottlers Whyte and Mackay this blended malt whisky is inspired by legendary polar explorer Sir Ernest Shackleton. Inspired by the three cases of Scotch discovered, frozen into the ice beneath Shackletons base camp at Cape Royds. To bolster team moral on his Antarctic expedition (Nimrod, 1907), Sir Ernest Shackleton brought aboard 25 cases of Mackinlays Rare Old Highland Malt Whisky. The case was discovered in 2007 a century later, the 11 bottles perfectly preserved. The bottles were excavated and flown to New Zealand where they were carefully thawed by the New Zealand Antarctic Heritage Trust. The whisky is now on display at the public gallery at Canterbury Museum.World-renowned Master Blender, Richard Paterson meticulously analyzed the antique whisky to re-create the Shackleton spirit, using it as the foundation of this modern whisky. After much scientific analysis of the salvaged bottles, it was discovered that the original Mackinlays was actually a single malt distilled at Glen Mhor in Inverness, matured in American oak Sherry casks and bottled at 47.3 percent ABV. The whisky has a subtle smoky character from the use of Orkney peat to dry the barley. This Shackleton whisky is comprised of a selection of Highland single malts, which were married in a combination of ex-bourbon American white oak barrels and Spanish Sherry butts. The result is a beautiful reenactment, with subtly peaty notes and a rich complex flavor profile of smooth vanilla, glazed fruits and a whisper of bonfire smoke.Pick up your bottle today!

Maggies Farm 50/50 Dark Rum
The urban Allegheny Distilling (Maggies Farm) is situated in the historic Strip District of Pittsburgh. The maker of Maggies Farm Rum, this is the first commercially-available Pennsylvania-made craft rum since Prohibition. Maggies Farm is an independent craft distillery, distilling all of their rums from Louisiana turbinado, from raw cane, rather than molasses, and pot-distilled for body and flavor on 100 percent copper Spanish-made stills. They produce their rums using Caribbean-derived yeasts using a long fermentation process for higher ester production. Their white rums are aged for 3-6 months in stainless steel vats for smoothness. Their rums are aged 2-3 years in neutral rum casks, to preserve the flavors and aromas. Their rums are also finished sans sugar additives yielding a naturally dry product, different than many other rums. All flavored products are made with all-natural ingredients 100 percent of the time.Maggies Farm 50/50 Dark Rum is a traditional style of a Caribbean dark rum produced by blending and aging their own pot-distilled cane rum with extra-aged molasses based, column-distilled rum from the Caribbean. The spirit is then re-aged an additional 6-9 months to marry the flavors. Maison Surrenne Cognac Borderies
Over three decades ago, Ansley Coale picked up a hitchhiker along Route 101 just north of San Francisco. The hitchhiker Hubert Germain-Robin was of French origin and came from a family that had been producing cognac since 1782. As the two drove northward in Coales car, Hubert spoke of his familys background in distillation. "Hubert wanted to distill using craft methods handed down for centuries from master to apprentice," recalls Coale, who eventually teamed up with the hitchhiker to found Craft Distillers in 2003. After purchasing an antique cognac still from an abandoned distillery, Hubert and Coale built a redwood shed in northern California and began distilling spirits. Craft Distillers Maison Surrenne range is a collaborative effort between Germain-Robin and Cognacs largest remaining family-owned producer: "Surrennes eight aging cellars hold extensive stocks of aged distillates that have been maintained pure and unblended. There are four distilleries, including the ancient installation in the chateau of Triac. The home distillery is on the Quai de lIle Madame on the banks of the Charente river in Jarnac. Great cognac reflects the land and climate from which its grapes were taken. The bottlings come from specific regions, and we further emphasize their individuality by using cognacs from a particular vintage, or a single distillery, or even an individual cask. Many of these bottlings are unblended, and the rarities are unfiltered." (Craft Distillers).Maison Surrenne Galtaud is an exceptional cognac that is from the single-still Galtaud distillery, founded in 1800 in the village of Mainxe. A 100 percent Borderies expression, this cognac is comprised of three select casks from Galtaud, a single still distillery in the village of Mainxe that has been in operation since the beginning of the 19th century. Aged 14 years, this distinctive full-bodied cognac is the essence of the unique terroir that is the Borderies, with its rich, fruit forward palate complemented by hints of violets and nut kernels. Rated the #14 Personal All-Time Favorite Brandy of F. Paul Pacult, Editor of F. Paul Pacults Spirit Journal: June 2016.Pick up your bottle today!

Makers 46 Bourbon
On October 1, 1953, William Samuels Sr. purchased Burks Distillery, which was situated in Loretto, Kentucky, for $35,000. Five years later, the distillery released the first bottles of Makers Mark Bourbon Whisky, which featured the distillerys distinctive red wax seal. The distillery was listed on the National Register of Historic Places in 1974 and was listed as a National Historic Landmark in 1980.Made from a mash of corn, wheat, and malted barley, Makers bourbon is aged in limestone cellars and handcrafted in small batches. They are one of the few distilleries that rotate their barrels from the upper to the lower levels of the aging warehouses during the aging process. This ensures that the barrels get equal treatment, evening out the differences in temperature fluctuation that occurs during the maturation process. This is the first new Makers Mark recipe in at least five decades. Makers 46 is Makers Mark with a French Twist. A full-fledged Makers Mark, aged for an extended period in seared French oak staves. The staves were sourced from the Independent Stave Company, who experimented with 10 virgin French oak staves, testing several different levels of sear to caramelize the wood sugars and seal in the bitter tannins of the oak. The final staves, labeled Profile 46, were then added to the barrels of original Makers Mark, and aged in Makers limestone bourbon cellars. The French oak staves create a smoother, bolder, more complex flavor profile, imparting more spice, sweetness, and vanilla onto the spirit. Bottled in a hand-dipped square-shaped vial at a solid 47 percent ABV. Pick up your bottle today!
