FEW American Straight Whiskey
FEW Spirits, based in the growing Chicago suburb of Evanston, Illinois, is an American grain-to-glass distillery founded in 2011. The distillery produces a range of award-winning whiskeys and gins, using ingredients sourced as locally as possible. The first inspiration behind this craft distillery are the pre-Prohibition times, or the golden age of spirits, and the 1893 Worlds Fair, which took place in Chicago. The second inspiration comes from the Prohibition itself. When trying to come up with a name and looking for a word that could imply something rare, small, the FEW Spirits founder and distiller Paul Hletko realized FEW are also the initials of Frances Elizabeth Willard, a prominent late-19th century figure in the Womens Christian Temperance Union, whose activities culminated in the Prohibition that started in 1920. Even though the Prohibition was repealed in 1933, Evanston remained a dry community several decades later, and you could not buy liquor there until 1970s. Hletko had his work cut out for him, and had to push for changes in the local law before he could start. FEW Spirits was the first distillery to open in Evanston in modern times, and in less than a decade of operation, its American whiskeys with a bold Chicago-style twist and other innovative products have already won a long line of awards and acclaims. Fidencio Clasico Mezcal
Over a century ago, Fidencio Jimenez moved his family to Oaxaca, Mexico known as El Capital Mundial Del Mezcal and began distilling mezcal. Before his death, Fidencio passed the trade on to his son, Enrique, who, in turn, passed the trade onto his son, Isaac. Today, Enrique Jimenez Jr., a fourth-generation mezcalaro, oversees the entire Jimenez estate, located in Santiago Matatln (a small pueblo in Oaxaca).On the estate, espadin agave plants that are at least a decade old and have reached the peak of maturity are harvested by the hands of expert jimadors. In tribute to their Zapotec heritage, the jimadors harvest agave only under a new moon, believing that the lunar phases have a profound influence on the flavor of the agave. After harvesting, the jimadors remove the long, sharp leaves of the agave using a machete, leaving only the heart of the agave, or pias, behind. At the palenque (or distillery), the pias are split by hand with an axe into four to eight pieces.In order to craft Fidencio Clsico mezcal, the split pias are roasted underground over a fire made from the embers of encino (or black oak) for five days, giving the mezcal its signature, smoky flavor. Once the pias have been roasted, they are crushed under a tahona (or stone wheel) made from rose quartz and the resulting pulp is then fermented using wild yeast for six to twelve days, depending on the weather.Fidencio Clsico is distilled twice through a traditional, wood-fired, alembic still. As a result, it has an aroma of herbs, earthy minerals and raw pineapple. The aroma gives way to notes of warming smoke, pepper and cinnamon, and leads to a smooth yet spicy finish. Fifty Pounds London Dry Gin
In the early 18th century, William of Orange prohibited the importation of alcohol into England. At the time, nearly all of the gin being consumed in Britain was being produced in the Netherlands. As a result of the prohibition, English citizens began crafting their own gin at home. Within a few years, one in three homes in London were making their own version of the spirit. In response to gins popularity, King George II introduced the Gin Act of 1736 . The act levied a tax of 50 on each British citizen hoping to produce and sell gin.
