Cedar Ridge Single Malt Whiskey
Nestled in a picturesque stretch of the Heartlands, just outside the town of Swisher in Eastern Iowa, sits Cedar Ridge Vineyards, Winery, and Distillery. Family-owned by Jeff and Laurie Quint, Jeff serves as both Master Distiller and Master Winemaker at the small operation, which has an outsized reputation for quality. Cedar Ridge the first micro-distillery in the state began distilling vodka back in 2005 before moving onto fruit liqueurs and, eventually, bourbon, crafting Iowas first bourbon whiskey since Prohibition.Cedar Ridge meticulously oversees every step of production from grain to glass. They store and mill our corn and grain on-site. The grains are twice distilled to a higher proof, removing the impurities and resulting in a cleaner, more approachable sipping whiskey. The grains left over from distillation are hauled off as animal feed for local farmers.The whiskey is then transferred to barrels, where they allow the spirit to mature naturally, being stored in a non-temperature controlled rick house. Iowas inconsistent weather patterns are what aids in the expansion and contraction of the barrels, allowing the whiskey to absorb the rich aromas and flavors more quickly than in other regions. This natural aging process, however, leaves about 18 percent to the angels. Cedar Ridge Single Malt Whiskey is aged in wine barrels, yielding a rich spirit full of character. Because we are a winery AND a distillery, naturally we have an abundance of wine barrels. We chose to go with a more fruit-forward recipe for our new Single Malt to really utilize the depth of flavors we have created within our wine barrels, states Production Manager, Kolin Brighton. Del Bac Distillers Cut Whiskey
Arroyo Design is a small custom furniture company founded upon the principles of using mesquite wood from the Sonoran Desert and making it into fine furniture, as opposed to using exotics from the rainforest. That same idea is the founding principle on which Del Bac Whiskey was founded. Stephen Paul founded the private family-owned and operated distillery company, Hamilton Distillers, Inc. in 2006. Headquartered in Tucson, Arizona they produce a unique range of Single Malts, including Del Bac.Del Bac was conceived while Stephen was drinking Scotch and barbecuing with mesquite scraps from his custom furniture company. The idea was born to malt barley over mesquite instead of peat. The result was a signature whiskey embodying the spirit of the American Southwest terroir. The unique whiskey was initially distilled using a 5-gallon alembic pot-still from Portugal. While perfecting the production process he learned how to malt barley, initially using a 6-row cattle-feed barley sourced from nearby Coolidge, AZ, later sourcing 2-row malting barley from Southern Colorado.After graduating with a 40-gallon pot-still in 2011, Stephen and his daughter Amanda incorporated Hamilton Distillers in 2011. They expanded and re-vamped their facility incorporating a 500-gallon distillery and malt house to malt 5,000 lb batches using a tank system to steep, germinate, and dry the malt between two tanks, a system that allows for more control, yielding a better quality malt."We do everything right in-house. We malt our own barley, and we mash, ferment, distill, barrel and bottle under one roof. After learning that so many "craft" or "artisan" American whiskeys actually come from the same mega distillery in Indiana, we are especially proud to say we do it all ourselves. Port Cask Finished Virginia-Highland Whisky
The late Dr. George G. Moore was a native Irishman, with an incredible passion for single malt whiskyand his adopted home Virginia. His Virginia Distillery Company is a union of these two passions, brought to life in 2011. Today the distillery is looked after by, Georges son,Gareth Moore and his wife,Maggie Moore, who have continued to preserve and cultivate Georges single malt dream.Virginia Distillery Company is currently producing an American Single Malt on-site using malted barley from the U.S. and water from Virginias Blue Ridge Mountains. This distillery flagship is being aged in ex-bourbon, sherry and re-toasted wine casks. Virginias hot summers and cool winters significantly influence the aging cycle, imparting a distinctive character onto the whisky. This flagship will be released in three to six years from the time of casking, in 2019.While this single malt matures, Virginia Distillery offers their Virginia-Highland Malt Whisky expression, distilled from 100 percent malted barley, and crafted from single malt whisky produced in the Scottish Highlands a region known for producing bold and powerful single malts that are full-bodied, rich, textured, and characterized by a touch of smoke and fruit.The whisky is then transported over 3,000 miles to the Virginia Distilling Company in Lovingston, Virginia where the Scotch is married with whisky made onsite in Virginia. This hybrid whisky is finished for several months in French oak casks that were previously used to mature a Virginia port-style wine. The French oak casks, which are sourced from a local Virginia winery, impart a copper-reddish hue to the whisky and contribute sweet, fruity notes. Port Cask Finished Virginia-Highland Whisky has notes of dried fruit and raisins on the nose, along with vanilla and barrel spice. Van Brunt Stillhouse Single Malt Whiskey
During the 17th century, Cornelius Van Brunt one of the founding fathers of Brooklyn farmed land alongside the banks of Gowanus Creek, while helping forge the eclectic society that became Brooklyn. In the 1800s, as the population of New York mushroomed and its waterways became vital hubs for maritime travel, the Brooklyn waterfront became home to some gin, rum, and whiskey distilleries.Prohibition forced the distillery to close, and it wasnt until the new 21st century that distillation resumed.
