Born in December 1839, William Grant became a cattle herder at the age of 7 to supplement his familys income. As a teenager, Grant apprenticed as a cobbler and a clerk, and in 1866, he joined Mortlach Distillery as a bookkeeper. For the next two decades, Grant managed the affairs at the distillery, while secretly learning the art of distillation. While five of the bourbons are made from a mashbill of 75 percent corn, 20 percent rye and 5 percent malted barley, the other five bourbons are made from a mashbill of 60 percent corn, 35 percent rye and 5 percent malted barley. In addition, the distillery utilizes five different proprietary yeast cultures. "Most distilleries use one mashbill on a regular basis and one proprietary yeast culture," says Jim Rutledge, the master distiller at Four Roses Distillery. "Four Roses uses five yeast cultures in conjunction with the two mashbills. Hence, we have ten unique bourbon recipes." The yeast cultures, which were developed specifically for Four Roses Distillery, allow Rutledge to vary the flavor and mouthfeel of the bourbon "Basic flavor characteristics generated by the yeasts include a light and delicate fruitiness, spicy characters, robust fruitiness, herbal essence and floral essence with a hint of fruitiness," says Rutledge.Once each of the bourbons has been distilled, the bourbons are matured individually in new, American oak casks, which are allowed to rest in a single-story warehouse just south of Louisville. After moving with their widowed mother to the small port city of Oban (situated in northwest Scotland), John and Hugh Stevenson took jobs building and repairing boats at the citys boatyard, a trade they had learned from their late father. In the 1790s, the brothers left their boat-making jobs and founded a brewery in the city. In 1794, they converted their brewery into Oban Distillery, one of the oldest and most prestigious distilleries in Scotland.For nearly a century, Oban Distillery remained in the hands of the Stevenson family. In 1883, however, J. Walter Higgin purchased the distillery and began renovations.
