Gaelic for Valley of the Deer, Glenfiddich puts a symbol of a stag on their emblem. Founded by William Grant (previously at Mortlach) in the summer of 1886, with his seven sons and 2 daughters, Glenfiddich is one of the only Scottish distilleries to remain family owned. the distillery was built by hand, on the banks of the the Fiddich River. At the height of Prohibition he insightfully increased whisky production, anticipating of a surge in demand after the ban. In the late 1950s, an onsite cooperage was established, with coppersmiths to tend to the distillerys distinctive copper stills. During 1963, William Grant and Sons responded resourcefully to a grain dispute with DCL, by building their own Girvan grain distillery, and made the decision to bottle and promote Glenfiddich as a single malt. They became the first Scottish whisky to promote their single malt outside of Scotland. This perspicacity is what introduced the single malt to the entire world. Glenfiddich has a longstanding presence in the whisky industry. Always on the forefront of imagination and innovation, it is the most awarded whisky in the world, and one of the highest selling whisky brands. In 1969 they were the first distillery to open their doors to the publicto this day they offer everything from tours, to private chef experiences. Under pagoda style roofs, are two still houses with 28 pear shaped copper stills, and handcrafted oak Solera vats that were added in 1998, to marry a range of aged spirits. Eager to satisfy the growing demand for high-quality Whisky from customers of his grocery store, James Moir established the Glenglassaugh Distillery in 1875. At the time, it was commonplace for store owners to distill or blend their own Whisky. The location of Glenglassaugh Distillery it is situated on the outskirts of Banffshire in the Highlands region of Scotland was chosen because it offered ready access to an incredibly clean and pure water supply: Glassaugh Springs. Glengoyne 18 Year Old Single Malt Scotch Whisky
Situated in a wooded valley in the Highlands region of Scotland, Glengoyne Distillery was founded by George Campbell and has been producing single malt whisky continuously since 1833. The distillery, which takes its name from "Glen Guin" or Glen of the Wild Geese, is situated directly atop the Highlands Line the line that divides the Highlands and Lowlands regions of Scotland. As a result, while Glengoyne Single Malt Scotch Whisky is distilled in the Highlands region, it is matured in the Lowlands region, despite the fact that the distillerys stillhouse and maturation warehouses are across the street from each other.Glengoyne Single Malt Whisky is produced exclusively from Golden Promise barley. Golden Promise is an early-maturing spring barley that has a depth of flavor ideal for single malts. Highland Park 12 Year Old Flaviar Edition 2020
Situated in the Orkney archipelago in Northern Scotland, Highland Park Distillery was founded in 1798 by Magnus Eunson. The name of the distillery is derived not from the region of Scotland known as The Highlands the Orkney islands are not a part of the Highlands but rather from the region known as High Park, where the distillery was founded. Highland Park is an incredible longstanding whisky house, and they pride themselves on their rich Norse heritage, an essence which is reflected in their craft.Today, over two centuries after its founding, Highland Park Distillery remains one of the few Scottish distilleries that continues to hand-turn, malt, and peat its own barley, using locally cut peat from the nearby Hobbister Moor. The malt is peated to 20 parts per million phenol, and then mixed with unpeated malt produced on the Scottish mainland... "You have to be careful here on the malting floor," says Eric Tait, Highland Parks Maltman. "You find it can get a wee bit slippery underneath. I have to turn the malt every eight hours to prevent the roots getting tangled and to get it all aerated properly. The airing also helps it to grow. The malt will be on the floor for seven days, and Im running five floors at the moment."After malting the barley, Highland Park Distillery smokes it using peat sourced from Hobbister Moor, a peat bog located approximately seven miles from the distillery. Hobbister Moor peat is sourced from floral heather bushes, which burn hotter and cleaner than the grassy peats of Islay. Also, the peat sourced from Hobbister Moor has greater derivatives of carbohydrates and a lower concentration of lignin than peat from Islay, giving Highland Parks peat a unique chemical fingerprint. The peat is "absolutely fundamental in understanding the flavor of Highland Park Whisky," says Russell Anderson, the distillery manager. Together with Orkneys unique environment (the temperate, moist climate of the archipelago results in an even maturation process), the peat gives Highland Park Whisky its traditional malty flavors that are tempered by an ever-so-subtle touch of smoke.This expression comes from their Single Cask series, meaning its a unique whisky where the cask yielded a total of only 306 bottles. The cask was hand-picked by Flaviar and the juice is bottled at a cask-strength full 125 proof.
