Following the end of the American Revolutionary War, Johannes Reginald Beam emigrated from Germany to the United States and eventually settled in Kentucky County. At the time, Kentucky County was still considered part of Virginia and was overseen by a military governor named John J. Bowman. After settling in Kentucky, Beam began harvesting corn and set forth a family tradition by distilling the excess grains he harvested into whiskey. Since then, seven generations of the Beam family have been involved in whiskey production for the eponymous company (the company is actually named after James Beam, who rescued it following Prohibition).Part of Booker Noes Small Batch Bourbon Collection, Basil Haydens Kentucky Straight Bourbon Whiskey is named after Basil Hayden Sr., a Maryland Catholic who led twenty-five other Catholic families from Maryland to Nelson County, Kentucky (near Bardstown, home of the Jim Beam) in the late 1700s. In addition to being a religious man Hayden established the first Catholic church in what is now the Commonwealth of Kentucky Hayden was also a distiller and a pioneering one at that. While most bourbon at the time was made from a traditional corn base, in 1796 Hayden defied convention by mixing small grains into his mash, believing that the spicy rye flavors would provide a striking complement to the corns sweetness. Much to the chagrin of the traditionalist set, Hayden proved to be right.Basil Haydens Kentucky Straight Bourbon Whiskey is made from a mash very similar to the recipe Hayden himself developed in 1796. The whisky has a golden amber color and a spicy aroma of breakfast tea and peppermint bark. On the palate, the rye grains are evident, as are the cracked pepper and honey notes. Bastille 1789 Hand Crafted Whisky
Twice a month, Jean-Marc Daucourts grandfather would organize Sunday lunches for about twenty people at their home in France. "We would sit for five hours eating, talking and enjoying Champagne, spirits and wine," Daucourt recalls. "This was my first and most important education. I learned the pleasure of entertaining."When Daucourt was old enough, he left his native France to study the art of distillation in Scotland and Germany. After apprenticing at a number of distilleries, Daucourt returned to France, and together with his brother Edward, purchased a distillery just outside the Cognac region in southwest France. Bastille 1789 Hand-Crafted Whisky is the realization of his dream of creating an outstanding whisky with a distinct French identity.Bastille Whisky is made from a mash of malted barley and wheat sourced entirely from northwest France (a number of Scottish distilleries source their grains from the same farms). After the barley and wheat are harvested, they are fermented and distilled through Daucourts ancient, copper alembic stills. The stills, which were traditionally used to distill cognac, have an odd shape a tulip-shaped pre-heater feeds the wash into a vase-shaped copper pot, where distillation occurs.Following distillation, the whisky is aged for five to seven years in a combination of French Limousin Oak, cherry wood and acacia casks. "After the initial maturation," says Daucourt, "Bastille is finished in different styles of wooden casks, which provide my whisky its delicate, harmonious and unique flavors." French Limousin Oak one of the most expensive types of wood used for barreling is prized because it is loosely grained and porous, allowing it to impart more flavor and tannins to the whisky that comes in contact with it. The cherry oak barrels, however, impart mild yet complex notes of dark chocolate, cherries and soft citrus, which are complemented by the floral and aromatic undertones from the acacia wood. Following maturation, the whisky is brought to proof with water sourced from the Gensac spring (the water has been naturally filtered for centuries through Grande Champagne limestone) before each batch is bottled.Bastille 1789 Hand-Crafted Whisky has a light and spicy aroma, with hints of fresh apricots, ginger and chocolate. The initial flavors are sweet, with touches of vanilla, citrus and cherries and are followed by complex notes of cinnamon, baking spices and oak.Bastille earned a score of 94 points and a rating of "Exceptional" from the Beverage Testing Institute in 2011. Charles Nelson was born on July 4, 1835 in a small town in the Mecklenburg-Schwerin state of northern Germany. BenRiach 10 Year Old Single Malt Scotch Whisky
Amidst the lush greenery, in the heart of Speyside, sits the pagodad roof of the BenRiach distillery. A facility that has been producing single malt Scotch since 1898. The area of Moray is known for its funnel shape, with the tip pointed to the source of the Spey River. Benriach sits at the very center of this funnel, just outside the town of Elgin. The story of BenRiach is one of resilience. In 1897, John Duff built the BenRiach distillery, after his early success with his Glenlossie and Longmorn distilleries. Duff even built a railroad in 1990, for the purpose of moving supplies back and forth between the two shops.The timing of his ambitious pursuits, however, proved problematic. Following the Pattison crash of 1899 and the downturn of the domestic market, BenRiach, along with many other distilleries were fated to close. During these 65 years, the plant remained operational solely as a malting facility for Longmorn. In 2004 the distillery was bought out by a private entity who released a true BenRiach single malt Whisky. The distillery eventually fell under the ownership of The BenRiach Distilling Co. which also took (befittingly) the Glendronach and Glenglassaugh distilleries under its umbrella.Under the guidance of former blender, Billy Walker, in 2013 the floor maltings reopened, and distillery production poured forth full throttle.The distillery was then acquired by Brown-Forman, in 2016. Benromach 10 Year Old Single Malt Scotch Whisky
Situated on the outskirts of the ancient Royal Borough of Forres, Benromach Distillery was founded in 1898 by Duncan McCallum, a former distiller at the Glen Nevis Distillery in Campbeltown, and FW Brickman, a former spirits broker from Edinburgh. After just two short years of operation, McCallum and Brickman were forced to close the doors to Benromach Distillery and since then, the distillery has changed hands a number of times.In 1993, malt whisky specialists Gordon and MacPhail acquired the distillery and began refurbishing it. The experts at Gordon and MacPhail took five years to re-equip the distillery with two new stills and secure the water rights to Champelton Springs in Romach Hills. On October 15, 1998, Benromach Distillery was officially reopened by Prince Charles of Wales.Benromach 10 Year Old Speyside Single Malt Scotch Whisky is made from a variety of malts (Chariot, Golden Promise and Optic) that are lightly peated to the distillerys exact specifications. Born in 1848 just outside of Kippenheim, Germany, Isaac Woolfe Bernheim emigrated to the United States when he was a teenager with just $4 in his pocket. He originally planned on taking a job in New York City, but when his employer filed for bankruptcy, Bernheim was forced to find another line of work. He eventually became a travelling salesman, selling housewares to families in Pennsylvania on horseback.When his horse died, though, Isaac and his brother, Bernard who had just emigrated to the United States himself moved to Kentucky. Black Dirt Bourbon
"I went to Cornell as a fruit science major because I was really into apples growing up," says Jason Grizzanti, the master distiller at Black Dirt Distillery. As a child, Grizzantis family owned and operated a small winery in upstate New York and he became enamored with fruits. After he graduated college, Grizzanti at the age of 23 applied for a $50,000 grant to start New York States first fruit micro-distillery. The state obliged and Grizzanti was soon producing a thousand gallons of eau-de-vie annually. When the state of New York amended its laws to accommodate craft distilleries, Grizzanti jumped at the opportunity.Black Dirt Distillery takes its name from the dark, fertile soil left by an ancient glacial lake that once covered thousands of acres of upstate New York. Prior to the 19th century, farmers generally avoided the land because the soil although rich in nutrients was poorly drained and often flooded. After a drainage canal was built in 1835, farmers began harvesting highly-prized Black Dirt onions on the land. Perfectly suited for growing fresh, sweet corn, Black Dirt has never been used for bourbon production until now.Black Dirt Bourbon is made from a mash of 80 percent Black Dirt corn, 12 percent malted barley and 8 percent rye. After fermenting the mash for approximately three to four days, Grizzanti distills the wash through his Christian Carl copper-pot still imported from Germany. After distillation, the bourbon is aged for a minimum of three years in new, American oak barrels with a #3 char before being labeled and bottled by hand.Black Dirt Bourbon has a dark amber hue, along with notes of dark chocolate, coffee, cinnamon and vanilla.
