Under UK legislation, Speyside is a protected region for Scotch whisky distilling. Ardmores distinctiveness transcends its whisky. Its mighty Victorian distillery is a sight to behold, nestled incongruously amongst the placid Highland countryside, home to the rarity that is the peated Highland single malt. Adam teacher was the son of a Glasgow blender, William Teacher. The reason the distillery was built here, says James MacTaggart, the master distiller at Arran Distillery, was because there was a very good water supply. In fact, it was tasted and it was decided that it was probably one of the best water supplies in Scotland for making whisky.Situated on the Isle of Arran, Arran Distillery was founded in 1994 by Harold Currie, the former director at Chivas Distillery, and is one of the last remaining independent distilleries in Scotland. When the distillery was finally completed in 1995 construction was halted for nearly a year when a pair of Golden Eagles built their nest near the distillery it became the first legal distillery on the Isle of Arran in over 150 years.Arran 10 year is crafted from unpeated Scottish barley, which is malted and then fermented using a proprietary strain of yeast. The Aultmore distillery was founded in 1895 by Alexander Edward, then-owner of the Benrinnes distillery. Situated in Keith Banffshire, this Speyside distillery gets its name from the phrase An t-Allt Mr, which is Gaelic for big burn, referring to its water source, the Auchinderran burn.Originally powered by a waterwheel, the facility quickly evolved to incorporate a steam engine, which ran 24 hours a day for seven decades. After being expanded in 1899, and experiencing a brief meteoric rise, the distillery abruptly went bankrupt and was eventually shut down. Aultmore reopened around 1904, only to be closed down once more during World War I due to barley shortages.In 1923, after the war, Aultmore was acquired by John Dewar and Sons, it changed hands again in 1930, to Scottish Malt Distillers, then back to Dewars and Sons subsidiary Bacardi in 1998. Aultmore has a history of forward thinking and innovation, being the first to use the draff (a waste product of whisky production) to use as animal feed.
