The non-governmental organization Mezonte is focused on promoting, supporting, and preserving the tradition and heritage of Mexican agave spirits. Led my mastermind, curator, and expert of everything agave Pedro Jimenez, they collaborate with various producers, featuring spirits from all over Mexico, especially Jalisco and Michoacn. Ming River Sichuan Baijiu
The Luzhou Laojiao Distillery is situated in the lush river town of Luzhou, in southwestern Chinas Sichuan Province. The winemaking traditions of Luzhou spans almost two thousand years, with luminaries such as Guo Huaiyu the creator of big qu baijiu in the fourteenth century and Shi Jingzhang inventor of pit fermentation baijiu in the fifteenth century laying the foundations of this special spirit.The Luzhou distillery is famed for its 1,000-year pit, 10,000-year mash technique involving optimizing the fermentation process that develops flavor over time. Monkey 47 Schwarzwald Dry Gin Distillers Cut 2019
After serving honorably in World War II, Commander Montgomery "Monty" Collins of the Royal Air Force was discharged in 1951 and moved to the Northern Black Forest where he opened a country guest home nicknamed "The Wild Monkey." The Black Forest area is notorious for producing some of the worlds finest fruit liqueurs, and so Collins eventually began experimenting with distillation. In time, he perfected the recipe for his very own gin, which became the signature spirit served at The Wild Monkey until the 1970s."When I heard about a special gin that contains classical spices and also ingredients from the Black Forest such as spruce shoots and lingonberries, I left my job and began doing research with the aim of bringing this gin back to life," says Alexander Stein, who resurrected Collins gin. After two years of research and development, Stein, together with master distiller Christoph Keller, settled on a recipe that called for 47 unique ingredients. In 1895, Masataka Taketsuru the father of Japanese Whisky was born in the small town of Takehara, Japan. At the time, Masatakas family owned a sake brewery, and in preparing to carry on the family trade, Masataka studied chemistry and biology at Osaka Technical High School. After graduating from high school, Masataka showed more interest in whisky than sake, and in 1918, he enrolled at the University of Glasgow in Scotland, becoming the first Japanese ever to study the art of whisky-making. While in Scotland, Masataka took chemistry courses during the day while apprenticing at distilleries at night, learning to distill and blend whisky first-hand at some of Scotlands most prestigious distilleries. Macarri, who received a graduate degree in Cachaa Agronomy from Universidade Federal do Parana in Curitiba, is often referred to as Dr. Cachaa. Macarri has studied every component of cachaa production, from the genetics of sugar cane to the exposure of cachaa to different types of wood.Novo Fogo Organic Gold Cachaa is made from 100 percent estate-grown, organic sugarcane grown without the use of chemicals or preservatives. While many sugarcane farmers burn their fields prior to harvesting their plants (burning enables faster cultivation), Novo Fogo refuses to use flame-harvesting due to the detrimental effects it has on the sugars residing in the base of the cane stalk. Rather, when the sugarcane reaches its peak of maturity, expert farmers at the Novo Fogo estate tenderly harvest the crops by hand.After the sugarcane is harvested, it is pressed to extract the sugar cane juice. The juice is then mixed with with organic corn, rice and lime juice and is fermented for approximately 24 hours.
