St. George Breaking and Entering Bourbon Whiskey
Founded in 1982 by German-born Jrg Rupf, St. George Spirits is one of the oldest craft distilleries in the United States. The distillery, housed in an old World War II airplane hangar on a former naval base on the edge of San Francisco, is home to Lance Winters, nuclear engineer, mad scientist and St. Georges master distiller, and Dave Smith, St. Georges chief blender.Winters and Smith, who are widely-known for experimenting with different types of spirits, have a laboratory dominated by a 10-liter test still, which sits adjacent to the glass beakers and graduated cylinders that cover every inch of their counterspace. Next to the dusty chalkboards caked with equations for the conversion of sugar to alcohol and intricate diagrams of molecular structures are bottles of experimental whiskies, vodkas and even an aging balsamic vinegar (its 14 years old already). After 30 years of producing their own spirits, St. George Spirits has developed a wicked hobby barrel thieving. Breaking and Entering Bourbon is the product of Winters and Smith going deep into the rickhouses of Kentuckys most venerable bourbon distilleries and selecting 300-plus barrels of bourbon to bring back to California. After sampling each individual barrel (which took three months alone) and experimenting with different blends, Winters and Smith settled on a recipe made up of 80 different barrels, each ranging in age from five to seven years. The result is a criminally delicious bourbon with notes of maple, banana, brown sugar and cinnamon."We like to think of our spirits as parties in a bottle, and the label is the invitation," says Winters.Accept your invitation today.

Starward Nova Single Malt Whisky
In 2007 Starward Whisky was born. Founded by David Vitale, Starward is handcrafted in the bedrock of southeastern Australias wine scene. Vitale helped kickstart the Australian single malt movement under the tutelage of whisky godfather Bill Lark, himself.Distilled at their facility in Melbourne, Starward Nova is a unique single malt, shaped by the hot climate and legendary red wines of Australia. The supreme quality single malt maker was recently crowned Best Australian Whisky Innovator and Starward earned Best Craft Distilled Whisky in the world in 2016.For this whisky, Australian red wine barrels have been meticulously, locally, hand-selected. A collection of uncharred Shiraz, Cabernet and Pinot casks were chosen, kept exactly as they were when they left the winery. This preserves both the character of wine and oak which impart a wonderfully complex character onto the spirit. Its brilliant auburn appearance is a nod to thefull-bodied red winesthat influence its maturation. Aromas of fresh raspberry and cinnamon spice mingle in the nose, giving way to more of the same on the tongue. A lengthy finish reveals more characteristics of those viticultural precursors: berry tartness, slight tannic astringency.Pick up your bottle today!

Straight Edge Bourbon Whiskey
The term "splinter group" means a subset of people who have broken off from the rest to pursue their own agenda. The Splinter Group as a company is a group of Napa Valley winemakers who have teamed up to finish classic American Whiskeys in ex-Wine casks. The Sinter Group was founded in 2013 by John Wilkinson of winemaker Bin to Bottle and Dave Phinney of Orin Swift Wines. They have since been joined by other experienced oenophiles (wine lovers) in the area, representing decades of experience. As non-distilling producers, they source their aged Whiskeys from established producers across the midwest and southeastern United States and then blend them on site in northern California. The married spirits are finally finished in first-fill Wine casks. They have completed four products to date, including an American Whiskey, Bourbon, Rye, and a Sweet Vermouth.Straight Edge Bourbon is a blend of Tennessee and Kentucky Bourbons aged five, seven, and eight years old. The net mash bill is approximately 70 percent corn with the balance 17 percent rye and 13 percent malted barley. The blend is then finished in local Napa Cabernet Wine casks brining a lush, ripe plum aroma and taste to the traditional Bourbon flavor profile. It has a nice balance and solid mouthfeel and is bottled at 42 percent ABV. The Wine cask finishing also deepens the color to an antique mahogany hue with hints of red. This Bourbon stands tall on its own as a flavorful sipping Whiskey taken neat or with a few rocks. Sullivans Cove American Oak Single Cask
Situated along the banks of the River Derwent on the island of Tasmania, Sullivans Cove was the site of one of Britains first penal colonies in Australia. In 1804, at the order of the Governor King of the British settlement of New South Wales, Lt. John Bowen transported some of the most heinous British criminals to Sullivans Cove, which eventually developed into the city of Hobart. Hobart was the perfect penal colony the areas dense forests required a huge labor force in order to establish a settlement, and its isolation and inaccessibility ensured there was no escape. Today, the island of Tasmania remains one of the most isolated and natural places on earth approximately 37 percent of the island is protected as natural reserves.Sullivans Cove Single Malt Tasmanian Whisky is made from barley grown exclusively on the island of Tasmania. "The islands deep red basalt soil, pure water and mild temperatures result in a barley that is perfect for distillation," says Patrick Maguire, the distillerys founder and master distiller (his ancestors were convicts that were imprisoned on the island). In addition, the island has one of the oldest and strictest quarantine programs in the world, ensuring that the barley remains untainted.Once the barley has been harvested, it is malted at the Cascade Brewery by Roger Ibbott, who has over four decades of experience malting barley. The malted barley is then mashed and fermented at Sullivans Cove Distillery using a unique strain of yeast developed specifically for the production of Sullivans Cove Whisky. Then, the wash is distilled twice through a handmade copper-pot still. "The real trick is to cut the run short, so that only the sweetest, best flavors and purest alcohol from the heart of the run is captured", says Macguire. "Its not the most sensible approach by an accountants standards, but then its a good thing that we are not accountants!"Their American Oak Single Cask is master distiller Patrick Maguires favorite expression and the one in their lineup to have garnered the most accolades over the years. The first Australian whisky to achieve a Liquid Gold Award in Jim Murrays Whisky Bible, this spirit spends around 13 years in ex-bourbon casks (its done when its done!), before being bottled at 95 proof. Its a great showcase of the style of the distillery with its rich and creamy profile that has plenty of vanilla, caramel, and fruit notes. Pick a bottle up today!

Suntory Toki Whisky
In February 1899, Shinjiro Torii opened a store in Osaka, Japan that traded in imported wines. Within a decade, Torii began producing his own sweet grape wine called Akadama Port Wine, which became wildly popular throughout the country. In 1923, Torri fascinated by whisky his entire life decided to expand his business and began construction of the Yamazaki Distillery, Japans first-ever whisky distillery.Although inspired by traditional Scottish distilleries, Torii envisioned a uniquely Japanese approach to whisky and chose a location for his distillery that offered a climate and terrain that were completely different than those of Scotland. Nestled on the periphery of Kyoto, Yamazaki Distillery is situated at the confluence of three rivers the Katsura, Uji and Kizu that provide the warm, damp environment ideal for the production and maturation of whisky.Fifty years after the construction of Yamazaki Distillery, Keizo Saji inherited his fathers vision and constructed Suntorys second distillery. Situated amidst the deep forests of Mount Kaikomagatake in Japans southern Alps, the Hakushu Distillery enjoys a unique microclimate as a result of being surrounded by nearly 6,000 varieties of plants and thousand-year-old granite rocks.Suntory Toki Japanese Whisky is a unique marriage of whiskies from Hakushu and Yamazki distilleries, as well as Chita Distillery, a single grain distillery in Aichi Prefecture on the Pacific coast of Japan. While the majority of Suntorys blends use malt whisky from Yamazaki as their main ingredient, Chief Blender Shinji Fukuyo wanted to try a new approach for Suntory Toki Japanese Whisky, utilizing Hakushu malt whisky aged in American white oak and Chita heavy-type grain whisky as the blends two pillars. Finally, Fukuyo adds both American white oak-aged and Spanish oak-aged malt whisky from Yamazaki, providing the blend with even more flavor and complexity.By pairing these seemingly dissimilar but deeply accordant whiskies, Fukuyos insight overturned the old relationship between malt and grain and created a blend that is both groundbreaking and timeless, says Suntory.Suntory Toki Japanese Whisky has a clear golden color and aromas of fresh basil, green apple and clover honey. The palate is filled with bittersweet citrus fruits, such as grapefruit and green grapes, as well as pungent herbs like peppermint, thyme and rosemary. The finish, which is subtle and slightly sweet, leaves an impression of vanilla and ginger which lingers endlessly.Pick up your bottle of Toki today!

The former farms 113 acres of rolling hills, became the inspiration for Taconic Distillerys entrance to Dutchess Countys local agribusiness market.Inspired by a sporting lifestyle, Taconics team share a love of the outdoors. Together they embrace hunting, fishing, and a general passion for the outdoor life. This lifestyle is imprinted upon all their products. This area is also the number one wine-producing region in the United States, and home to a world class culinary institute. Taconic prides itself on preserving a bourbon whiskey tradition: From George and Martha Washingtons home during the American Revolution, to the Great Estates of the Vanderbilts, Roosevelts and Rockefellers, to the hunting preserves and horse farms of today, bourbon whiskey has been savored for generations (Taconic Distillery). To maintain an unadulterated flavor of the whiskey, Taconic never chill filters, and distill their whiskeys below 160 proof to retain the flavors from the grains. It is the flavor of the grains that are transferred through the distilling process as fatty molecules or flavor oils which results in a cloudiness in the whiskey. Those flavors are transferred through the distilling process as fatty molecules (flavor oils). Some distillers will chill filter the fatty molecules and sacrifice a certain amount of flavor for clarity.Taconic uses distinct Coopers Select, Char #3 new oak barrels made by the Independent Stave Company. Their barrels have a unique maturation process; aged in shipping containers. Less is lost to the angels share, due to the saturation of the air inside the containers. Being exposed to great temperature fluctuations, results in greater movement of spirit in and out of the barrel staves. Aging occurs in cycles, during times of increased temperature such as in the summer, the whiskey expands through the char, through to the untreated wood beneath. While in the wood, the whiskey dissolves various flavorful compounds. When temperatures drop, the liquid contracts and brings out all of the flavors of the wood, producing flavors that complement the body of the whiskey.Taconics Straight Bourbon Whiskeyis bottled at a barrel strength 115 proof. Talisker 10 Year Old Single Malt Scotch Whisky
Situated on the shores of Loch Harport, Talisker Distillery is heavily influenced by its location on the Isle of Skye it embodies the spirit of the rocky, storm-lashed island and its strong, steadfast people. The distillery was founded in 1830 by Hugh and Kenneth MacAskill, who leased the Talisker House from Clan MacLeod and eventually converted it into a distillery. When a new lease for the distillery was negotiated between the MacAskills and Clan MacLeod in the second half of the 19th century, the annual rent settled upon was 23.12 and a ten-gallon cask of the best Talisker Whisky available.Talisker Single Malt Whisky is made from malted barley sourced from the Muir of Ord, a village in Highland, Scotland. The barley is lightly peated to approximately 18 phenol parts per million, which contributes a slightly smoky flavor profile to the whisky. Once the barley has been malted and peated, it is mashed using soft water drawn from one of the 14 underground springs that rise from Hawk Hill Talisker has been using the same water source since it was founded nearly two centuries ago. "Im restless at heart so youll find me poking my nose into the mash tun at all hours," says Mark Lochhead, Taliskers Distillery Manager. After the barley has been mashed, it is fermented in the distillerys wooden washbacks before being twice distilled through Taliskers copper-pot stills. The stills are equipped with unique swan-shaped lye pipes and worm tubs. As a result of this configuration, a portion of the vapor during distillation condenses before reaching the cooler, and runs back into the still for redistillation. This process gives Talisker Single Malt Whisky its signature, full-bodied flavor profile.Following distillation, Talisker 10 Year Old Single Malt Whisky is matured in traditional oak casks for a minimum of ten years. The whisky has a slightly smoky aroma, with hints of spice and salt. The aroma gives way to notes of smoked meat, black pepper, cloves, honeyed oak and masa on the palate, and ultimately leads to a slightly sweet and long finish.Talisker 10 Year Old Single Malt Scotch Whisky earned the Double Gold Medal at the San Francisco World Spirits Competition in 2013 and was rated the "Editors Choice"by Whisky Magazine. In addition, it earned a rating of 9.5 out of 10 by Jim Murrays Whisky Bible and was rated a "Best Buy"by Wine Enthusiast. Finally, it earned a score of 94 points at the Ultimate Spirits Challenge in 2013."Making Talisker demands long hours and no compromises, so I tour the distillery several times a day making sure no part of the process betrays the rest," says Lochhead. The stills are equipped with unique swan-shaped lye pipes and worm tubs. As a result of this configuration, a portion of the vapor during distillation condenses before reaching the cooler, and runs back into the still for redistillation. This process gives Talisker Single Malt Whisky its signature, full-bodied flavor profile.Following distillation, Talisker 18 Year Old Single Malt Scotch Whisky is matured in traditional oak casks for a minimum of 18 years. As a result, the whisky has a bold aroma, with notes of toffee, espresso, maple syrup and peat smoke. The aroma gives way to notes of honeyed nuts, orange zest, citrus and rock candy, and leads to a finish accented by hints of tobacco and leather.Talisker 18 Year Old Single Malt Scotch Whisky earned a score of 93 points from Whisky Advocate and 90-95 points from Wine Enthusiast. It was also rated the "Best Whisky in the World" at the World Whiskies Awards in 2007."Making Talisker demands long hours and no compromises, so I tour the distillery several times a day making sure no part of the process betrays the rest," says Lochhead. Tamdhu Batch Strength #3
Inspired by the Diamond Jubilee of 1897, which celebrated then-Queen Victorias 60 years on the throne, a group of Scottish merchants and whisky traders pooled together capital (roughly equivalent to 20 million in todays currency) to build the most technologically-advanced distillery the world had ever seen. After procuring land adjacent to the River Spey, the group hired Charles C. Doig, the most esteemed distillery architect and engineer of his time, to construct the industrial masterpiece. The result was Tamdhu Distillery, the most modern distillery of its era.Tamdhu Distillery survived the ups-and-downs of the 20th century until finally closing in 2011 shortly after its closing, the distillery was purchased by Ian Macleod Distillers and is now producing whisky by the same exacting standards which earned Tamdhu Distillery its sterling reputation over the prior century.Batch Strength 003 is the third edition of the multi-award-winning Tamdhu Batch Strength Series. Tap 357 Canadian Maple Rye Whiskey
Since 1989, the Federation of Quebec Maple Syrup Producers has regulated the supply of Canadian maple syrup in order to ensure that prices remain stable. Maple trees need optimal climate conditions cold nights and temperate days in order to produce sap, which in turn, is used to produce maple syrup. In order to keep prices stable, the FQMSP purchases and warehouses maple syrup in years where trees produce abundant sap, and sells maple syrup in years where production is lacking. It may seem bizarre, but Quebec produces 77 percent of the worlds maple syrup.Tap 357 is a marriage of two purely Canadian flavors: maple and rye. The rye whisky, which is produced at one of Canadas oldest distilleries, is distilled four times over and then matured in a combination of new, second and third-use bourbon casks. The bourbon casks add a hint of honey and oak to the whisky, which nicely balances out the earthy, spicy flavor of the rye. After maturation, master blender Michel Marcil blends a combination of three, five and seven year old rye whiskies together with pure Canadian maple syrup sourced from maple trees that were tapped at the first hint of spring in the province of Quebec. The maple-rye combination is then finished in a proprietary process, before each bottle is filled behind a label featuring a hand-drawn illustration of Canadians tapping maple trees.Tap 357 Canadian Maple Rye Whisky has an aroma of maple syrup that is instantly identifiable but not overwhelming. The subtle sweetness of the maple syrup adds an additional layer of complexity, and is quickly followed by a spicy bite of rye. The finish is long, and has a hint of pine and smokiness.Pick up a bottle of each today!

Teeling Single Grain Irish Whiskey
In 1782, Walter Teeling opened a distillery along Marrowbone Lane in Dublin, Ireland. At the time, nearly 40 independent distilleries dotted the rolling Irish landscape, the majority of which were centralized in the industrial engine room of the city the Liberties. "Since 1782 the Teeling family has been crafting Irish Whiskey," says Jack Teeling, the founder of the Teeling Whiskey Company. "The entrepreneurial spirit that inspired Walter Teeling back in the 18th century has not been diluted over the years and the latest generation of Teelings are committed to innovating and creating unique Irish whiskeys."Teeling Single Grain Irish Whiskey is crafted from 95 percent corn and 5 percent barley, which is milled, mashed and distilled together at the Cooley Distillery in County Louth, Ireland. Much like single malt whiskey, single grain whisky must be produced in a single season at a single distillery. After distillation, Teeling Single Grain Irish Whiskey is fully and rested in ex-Cabernet Sauvignon barrels from California, then bottled in small batches at 92 proof without the use of chill filtration. As a result of its unique maturation process, Teeling Single Grain Irish Whiskey has a bright golden color, and an aroma of butterscotch, sweet cherries and cake frosting. The palate is packed with deeper flavors, such as oak, chocolate fudge, cinnamon and marshmallow, and leads to a finish accented by raisins, orange peel and coconut. Teeling Single Grain Whisky earned the Best Grain Whiskey title at the World Whiskies Awards in 2014, and is now available in the U.S. for the first time ever. Pick up a bottle today!
