The majority of Canadian whiskies are comprised of a mash bill of corn, rye, and malted barley. These grains are then mashed, fermented and distilled, at which point they are aged in new oak barrels. The blend includes the last stocks of whiskies distilled at the famous LaSalle Distillery, which was shuttered in 1993. The distillery was known for producing whiskies with a unique richness that was attributed to the water that surrounded it. "LaSalle holds a historic place in the whiskey world and is incredibly special to me," says MacKay, "because its where I first learned about creating memorable blends.""The whiskies are obviously from pre-1993," adds MacKay about Crown Royal XR, "but when were putting these blends together, the idea is not to hit an age profile.
